For starters, the French fine-dining establishment has a new head chef, Dameon Evers, who said he plans a “flawless dining experience.” One look at his menu and you’ll know how serious he’s being. Start with small bites on the degustation section, particularly Hawaiian kampachi, highlighted by petit radishes, pineapple mint and Koshihikari rice, and ricotta gnudi, so flavorful with consommé royale, Parmesan and Alba white truffles. And vegetarians can rest easy, as there’s a bountiful portion of the menu dedicated to meatless dishes, including red kuri squash veloté, featuring podi spice, Parmesan fondue and black winter truffle, and Strawberry & Milk, made with Harry’s Berries, Sicilian pistachios and orange mint.
