At Resorts World Las Vegas, you’ll find FUHU, an energetic Asian bistro by the Zouk Group. It’s right off the dynamic District, close to numerous other venues, but sporting a gorgeous contemporary feel in décor with a nod to the past. And with DJs playing from two booths, it feels even more exciting.
The menu here is relatively small, but you will find that it packs plenty of choices and exciting twists on Asian dishes, and the first place to look is in the cocktail section. The Zedd is named for the DJ who has a residency at Zouk Nightclub (he’s anchoring the nightclub’s New Year’s Eve celebration). It’s concocted with Jack Daniel’s Tennessee Fire, Campari and falernum, while the Green Gold keeps it spicy with a diverse flavor matching of Casamigos reposado, peppers, pineapple and matcha.
You can go with small bites to start (Tiger Bites on the menu!) or sushi. Some things to snag while you’re there: Miso cod tacos in bibb lettuce, signature black pepper beef, seared foie gras and vegan Chick’n larb, which uses Gardein in the preparation. And Asari miso soup gets a little kick with clams and scallion.
Get tuna several ways in raw, sashimi and roll form. The crispy tuna from the raw menu section brings in spicy mayo and sweet soy plus crispy garlic and rice. Coconut tuna ceviche gets a little twist with celery Bermuda onions, cilantro and chicharrónnes—pretty wild—and the chili tuna specialty roll combines spicy tuna takuwan and sweet gochugaru. Can’t decide? Get them all!
If you need more substantial entrées, order the bone-in ribeye with miso powder, brown butter, and sweet soy sauce; prime bone-in short rib with kabocha purée; or you can even ask for the whole fish plancha—the impressive presentation may cause you to forget the rest of the dishes on the table.
If you are up for brunch (and who knows if you will be, especially if you partied at Zouk Nightclub the night before), FUHU features platters of oysters and sashimi, ube pancakes, a dim sum collection, chicken katsu and plenty of cocktails to get your strength back and your motor running. Szechuan Mary, anyone?
