Brianna Glantz is the assistant general manager of one of the country’s consistently highest-grossing restaurants. Approaching two decades in Las Vegas, Tao Asian Bistro at The Venetian has welcomed the world’s biggest stars to its dining room and attached nightclub, and it remains a city hot spot. It gets even more star power this season with the opening of the redesigned Tao Beach Dayclub (near the nightclub and restaurant).
“I try to be modest about it,” says Las Vegas native Glantz. “Tao has always been a name that’s been attributed with nightlife titan. When I associate myself with being the assistant general manager of one of the highest-grossing restaurants in the country, that impostor syndrome sets in. The team works so hard; it makes sense that we’ve been able to successfully do what we do for nearly 20 years.”
Glantz herself has found much success in the city. She was only 19 when she got her first job in the food and beverage industry as a maître d’ for Giada at The Cromwell. At just 22 years old, she landed her first management job at Beauty & Essex at The Cosmopolitan, spending five years there before she helped open FUHU at Resorts World Las Vegas. In October, she joined Tao Asian Bistro.
“It took me a period to figure out how to manage people and have that tact,” Glantz says. “It’s about being respectful and being an honest person and leader. When you start to lose the ability to be on the level with your team, you don’t necessarily become a leader that people want to be led by. I would like to think that I’m someone that’s one with my team.”
And just as Glantz’s career has taken root and grown, so has her favorite hobby—literally. “I’m a houseplant hobbyist,” she says. “I nerd out with it. There’s like 50, 60 plants all over my house. It’s like a jungle. It’s pretty intense.”

“Tao is a pan-Asian restaurant concept,” says Glantz. “But it’s far different from any other Asian concept in Vegas because we are so close in proximity to the nightclub (that) we’re able to harness that nightlife experience while you dine. It’s a high-energy, vibe-dining restaurant.” And the cocktail program fits perfectly with the theme, showcasing many Asian-inspired drinks like the Jade Scorpion. Refreshing with a slight citrus twist, it’s made with Junmai sake, St-Germain, yuzu, green tea and matcha with a matcha-dusted rim.
