If you love sushi, you will undoubtedly love the new Nobu at Paris, world-renowned chef Nobuyuki Matsuhisa’s third Vegas location. A courtyard setting and “indoor” room lies to the rear of the patio, while another dining area has a sushi bar and open kitchen behind, while the backs of several curved upholstered seats form a wall of sorts, setting off the room from the corridor. The menu here pulls in many of Nobu’s most signature fusion dishes, both cold and hot, such as the tacos. These small plates, like Nobu’s other dishes, take simple ingredients and imbue them with extraordinary flavor. The lobster taco is dressed lightly and is super tender, and the vegetable taco, with sweet potato purée and wasabi, is lovely. Other great options include a scallop roll, where the star ingredient creates a creamy feel in the mouth.
For bigger bites, choose the black cod with miso, moist, flaky and even buttery. The omakase menu is one of the best bets here, with signature and vegetarian options.
