Savvy Las Vegas diners and epicureans know the best way to enjoy a truly memorable multicourse meal in this city is to put yourself in the capable hands of the kitchen and let these talented artists take control. When you really want to go all out, explore and adventure with a chef’s menu or tasting menu experience at one of these amazing restaurants.
L’Atelier de Joël Robuchon (702.891.7358) has long been one of the most elegant and interactive dining experiences on the Las Vegas Strip, a playful twist on the legendary cuisine of “Chef of the Century” Robuchon. Situated near the French icon’s fine-dining establishment at MGM Grand, L’Atelier is the top spot for creative culinary exploration, where guests can sit at the fancy bar counter and watch a team of chefs prepare mind-blowing dishes like royal snapper carpaccio with lemon vinaigrette, carrot and cumin velouté with goat cheese ravioli, caramelized quail stuffed with foie gras and Grand Marnier souffle. Flexible tasting menu options allow you to customize your meal depending on your appetite and flavor preferences
If you prefer your blowout French dinner to be a bit more formal and traditional—with an extra dash of modern influence—it’s time to head to Caesars Palace for the five-star Celebration Menu at Restaurant Guy Savoy (702.731.7286). The chef’s iconic artichoke and black truffle soup with toasted mushroom brioche is one of the cornerstones of this menu, and you’ll also sample ahi tuna with caviar, radish and black garlic, A5 Japanese wagyu beef with lobster, and a fantastic cheese course before dessert.
Several local eateries specialize in omakase sushi experiences using impeccably fresh fish and simple, classic preparation, and Yui Edomae Sushi (702.202.2408) is the pinnacle of this unique way to dine. Bring your favorite seafood-loving friend, grab a couple seats at the bar and let chef Gen Mizoguchi wow you with bite after bite of rare fish flown in daily from Japan, supplemented by wagyu beef, grilled items, the sweet omelet known as gyoku and more. Pretty much everyone loves sushi, but Yui is the only place to do it like this.
Another innovative off-Strip gem—one also located in the city’s exciting Chinatown district—is EDO Gastro Tapas & Wine (702.641.1345), offering traditional Spanish flavors prepared with unlimited creativity. EDO offers vegan and vegetarian menus, but if you’re ready to go all-in, the chef’s tasting menu offers 10 courses of brilliant bites, including Peruvian scallops with strawberry ponzu, a tarte flambée with Iberico ham and Manchego cheese, tempura squash blossoms in wild boar ragu, and braised short ribs with foie gras mousse.
Spanish cuisine is considered some of the most cutting-edge fare in the world, and you can’t really talk about it without mentioning chef José Andrés. Get a taste for what he can do at Bazaar Meat by José Andrés (702.761.7610) at Sahara Las Vegas, where the “José’s Way” menu is a cavalcade of small dishes plus a big beef offering to share with your tablemates. Cotton candy foie gras, “smoke and ice” oysters, beefsteak tomato tartare and Spanish-style bone-in ribeye steak fired over oak are dishes you will only find at Bazaar Meat, so make the most of it.
