Whether you’re starting off your vacation or are winding down, brunch is one of the best dining experiences around. At FUHU in Resorts World Las Vegas, Saturday brunch offers the perfect way to fuel up and get in some day drinking, too. The restaurant, located at the end of The District (where you head to both Ayu Dayclub and Zouk Nightclub), is beautifully decorated with a faux Sakura tree in full bloom. Inside, you’ll find a fun bar and dining area.
Speaking of drinking, order a cocktail first thing. The Sakura Smash is a fresh sip with Grey Goose Strawberry and Lemongrass Essences vodka and St-Germain elderflower liqueur, while FUHU’s Ketel One espresso martini gives you a nice kick. Sake, beer and wine are available as well.
Once that’s accomplished, give full rein to your hunger—oysters with traditional sauces, a sashimi platter that changes depending on what’s freshest, and chirashi, with sashimi over seasoned sushi rice, are great openers.
FUHU also offers dim sum choices like foie gras and roast duck buns, shrimp and pork shumai and crispy seafood soup dumplings, among others. Mushroom and scallion dumplings give vegans an option, and a clever orange accent along the top of each makes them visually appealing.
If you’d like a salad to whet your appetite, the bibb lettuce salad is super light, with radish, tomato, miso ranch and youtiao (a type of fried Chinese dough) croutons.
For main items, try a selection of rolls like the spicy tuna, bluefin tekka maki, or salmon avocado. You can also indulge in shrimp tempura.
Chicken katsu and FUHU chilaquiles are two popular choices at brunch—the katsu comes with a fried egg, pickles and steamed rice, while the chilaquiles are topped with two eggs, yuzu crema, red onion, cilantro and cotija cheese—just a super-savory comfort food. For vegans, in addition to the dumplings, a Chick’n larb is composed of Gardein, lemongrass rice powder, onion and a citrus vinaigrette, while the vegan Impossible beef bowl combines crispy Impossible meat with beech mushrooms, peppers and basil laid over steamed rice.
For a classic, try the New York steak and eggs with crispy fingerling potatoes. Other traditional brunch dishes are combined with Asian flavors, like the FUHU prime short rib Benedict, with an over-easy egg and red vinegar hollandaise, as well as the ube pancakes with condensed milk and whipped butter, plus kerisik (a buttery coconut paste). The breakfast sandwich piles an egg, bacon, avocado, cheese and sambal ketchup.
In the place of dessert, add on the Nutella French toast, a yummy plate with hazelnut crunch, berry sauce and whipped cream that’s perfect to share. And from the dim sum menu, the sesame balls with red bean paste fill in perfectly as a sweet. They’re large and crunchy, and covered in sesame seeds. If you don’t order them for dinner, do order them earlier, as they are worth it.
