There is no doubt that Wally’s Wine & Spirits is just as billed, with those walls of bottles stretching from floor to ceiling around the restaurant at Resorts World Las Vegas. But those walls don’t tell the whole story, as a bar, cheese counter, kitchen and more racks of wine are tucked around the huge space.
Outside, a laid-back patio testifies to the California origins of the restaurant, where the Beverly Hills and Santa Monica locations have been legendary for years, and hugely popular among the glitterati. Wally’s Vegas has proven nearly as popular with new guests pouring in from not only California, but worldwide.
Once seated, drinks are a must, whether it’s a great glass of wine (and there are many choices available by the glass) or a signature cocktail.
For brunch, choose from French toast, a decadent dish with oven-roasted brioche bread pudding, lemon whipped ricotta and roasted stone fruit; salmon avocado toast with poached eggs; and steak and eggs, featuring Creekstone beef, sunny-side up eggs and red chimichurri sauce.
The lunch menu is truly appealing, with such appetizers as the wood oven baked brie. Slices of baguette are laid with a fermier brie, truffle butter and truffle honey, with shaved burgundy truffles on top. It’s a fragrant mouthful that gets your palate ready for the rest of your meal. And if you’re a truffle fan, you are in such luck, as the truffles don’t only land there!
There are several pizzas on the lunch and dinner menu, from a luscious truffle pizza to a white pizza, with pear, Roquefort cheese, bacon and a champagne vinegar gastrique. It’s a pretty presentation with incredible flavors.
Choose from a range of sandwiches, including the signature Wally’s Hero, on a ciabatta roll stuffed with provolone, Genoa ham, mortadella, capicola, prosciutto, pepperoncini, and tomatoes. With that variety of flavor, no wonder it’s a favorite. Even the grilled cheese has a little extra—aged Gruyére and gouda with shallot chutney on country bread. If you’re in the mood for a burger, Wally’s version features wagyu and smoked gouda, along with heirloom tomatoes and caramelized onions. And get the fries!
Dinner is highlighted by several truffle dishes, such as a truffle Caesar salad, the truffle pizza, baked brie, truffle Bolognese and truffle gnocchi. Wally’s uses French black truffles, with Italian white truffles available for an extra cost. Truffle Bolognese combines a veal truffle bianco ragù with Vesuviotti pasta with shaved truffle and aged Parmesan, while truffle gnocchi covers pillowy ricotta gnocchi with an abundance of braised wild mushrooms, Parmesan and grated truffle. It’s a personal favorite.
Larger entrées range from the signature, shareable Hundred Dollar Chicken, a whole bird with truffle chicken jus and shaved truffle, to New Zealand lamb chops, filet mignon and wagyu tomahawk. Pan-seared king salmon and saffron lobster risotto add a smooth touch to the mains.
Could there be truffles on the dessert menu? Well, no. But what they do have is just as good—dessert by the glass! Louis XIII cognac, anyone? In addition to cognac, there are sweet wines, brandies, sherry and more. For a more traditional dessert, enjoy an apple tarte Tatin, or the chocolate board, with dark and milk chocolate, fruit and nuts.
