By now, you’ve probably all seen it while traveling on Las Vegas Boulevard South—the prominent façade, rising high and jutting out. It’s practically impossible to miss, making Capital Grille arguably the most distinctive restaurant on the Strip. But that’s just the beginning of the “wow!” factor you’ll experience dining here.
The Las Vegas outpost of this national chain is also one of its largest, so spacious that it has two entrances on either side—one from the Strip, the other from the valet parking area. But despite the size, no matter where you sit, it feels intimate; Capital Grille feels like a true old-school Vegas room, full of impeccably appointed tables, plenty of areas for private events, a spacious bar area and plenty of displayed wines and other spirits. And, as you can imagine, the views are unparalleled—everything from the Wynn properties to Resorts World.
With such great views, a cocktail is practically mandatory, and Capital Grille has a treat for every palate. Vodka fans will want to try the Stoli Doli, a drink with a Dole pineapple finish that’s chilled and served straight up. Bourbon fans, heads up! The Old-Fashioned take here, called In Fashion, blends Russell’s Reserve 10-year small batch, Grand Marnier, black walnut bitters and an amarena cherry, all chilled with an orange ice sphere.
If you go for lunch, starters are some of your favorite classics like shrimp cocktail, New England clam chowder, caramelized French onion soup, Caesar salad (with Grana Padano croutons) and pan-fried calamari with hot cherry peppers, but make sure to ask your server about off-the-menu options. On the day I attended, I was informed about a lobster bisque that was not included on the menu. (However, often it is; selections can vary widely, depending on the week.) It was sensational, featuring large, delectable chunks. Another great lobster option is the lobster mac ’n’ cheese.
Entrées include plenty of seafood and meat options, from a Maine lobster salad with a citrus vinaigrette, the Capital Grille cheeseburger (served with truffle fries), a 22-ounce bone-in ribeye, and sushi-grade sesame seared tuna (served with gingered rice). Once again, off-the-menu options are definitely worth exploring. My server informed me there was a French dip sandwich available, using sliced ribeye. Again, I tried it, and again, did not regret my decision one bit. My vegetarian companion was surprised by an off-the-menu pasta dish with an oil-and-butter sauce.
Sides are all deeply satisfying, from Sam’s Mashed Potatoes using red bliss potatoes, sweet cream, butter and salt, au gratin potatoes, creamed spinach (with a béchamel sauce blend) and grilled asparagus with lemon mosto, sprinkled with rare fleur de sel.
Don’t skip on dessert here, the perfect capper to a perfect experience. We recommend flourless chocolate espresso cake, which pairs wonderfully with fresh raspberries. Other options include brulée-style cheesecake paired with fresh berries, and coconut cream pie, drizzled with house-made caramel sauce and a hint of rum.
