It doesn’t get more classic Las Vegas than the Steakhouse at Circus Circus. Nearly four decades of slinging steaks, the sounds of Sinatra, cozy booths and a classic lemon drop martini (on the menu since day one) have become the staples of this lauded dining institution. Another special thing about the steakhouse is the grill in the center of the dining room, where chefs cook up cuts of meat over the mesquite firewood. It’s a very unusual thing on the Strip.
The menu has remained pretty much the same since opening: Guests choose their cut of meat and then get a side of fresh veggies and a choice of black bean soup or salad for the appetizer and mashed or garlic potatoes or wild rice for a side. Classic cuts include New York Strip, filet mignon, prime rib, and there’s also lamb chops, lobster, salmon, chicken or even Alaskan king crab legs.
