One of the biggest Strip restaurant openings of this or any year has arrived at Caesars Palace. Celebrity chef Bobby Flay’s latest culinary innovation is Amalfi (702.650.5965), which aims to transport guests to the Mediterranean for a fresh and vibrant taste of the Southern Italian coast. Flay became infatuated with the region and its food after years of travel and exploration, and that’s what inspired him to shift his celebrated Mesa Grill at Caesars into this new rustic-yet-elegant experience. Check out the fresh fish and seafood display and consider sharing a whole fish grilled over charcoal as the centerpiece of your feast. Flay has done it again!
A more storied Italian eatery just off the Strip is serving up some fresh offerings of its own. The legendary Ferraro’s (702.364.5300) on Paradise Road across from Virgin Hotels Las Vegas recently unveiled an extensive selection of season spring dishes and small plates available for dinner or during “ora sociale” happy hour. Explore the Fagottini Bresaola, air-cured filet mignon plated with ricotta and Parmigiano-Reggiano cheeses, marinated artichokes, arugula and lemon; delicate spring pea risotto with mint and creamy burrata; or fresh-made gnocchi with basil pesto, sundried tomatoes and Pecorino. For a shareable snack, the Romagna pizza with rich mortadella, ricotta and pistachio is a classic crowd-pleaser.
Speaking of making everyone happy, Dick’s Last Resort (702.597.7991) has been doing exactly that for more than a dozen years at Excalibur with high-energy service, massive margaritas and fun food based on tavern classics like steaks, burgers and barbecue. Now you can double up with Dick’s brand-new downtown location on the ground level of the Neonopolis entertainment complex at the eastern edge of the Fremont Street Experience. It’s a perfect fit for the original Vegas drag, and the party’s just getting started.
While you’re in the area, be sure to stop off at the hottest new eatery downtown and definitely come hungry. Soulbelly BBQ (702.483.4404) comes from the mind of James Beard Award nominee and Top Chef competitor Bruce Kalman, who’s smoking beef brisket, turkey, pulled pork and spare ribs and serving some of the city’s best meats alongside salt and vinegar chicharrones, pimiento cheese dip, German potato salad and collard greens. Locals and other Vegas chefs have already discovered this new gem, and now it’s your turn to hit the Arts District and see what all the buzz is about. Besides, who doesn’t love BBQ?
Back on Las Vegas Boulevard, another new seasonal menu has dropped. Gordon Ramsay Steak (702.946.4663) at Paris Las Vegas has added spring dishes for your review, including seared Hudson Valley foie gras with smoked almond granola and strawberry white balsamic; pan-seared salmon with morel mushroom cream, fire-roasted artichokes and fava beans; and Colorado rack of lamb with Manchego polenta cakes and trumpet mushrooms. The man behind Hell’s Kitchen is always making sure his Las Vegas restaurants are maintaining high standards, and this acclaimed steakhouse has a lot to offer.
