The Red Rock Resort restaurant offers so much goodness that most diners will wish they could be rolled out of the place in a wheelbarrow.
Let’s start with the appetizers. To share, order the smoked barbecue nachos with smoked brisket and jalapeños with black beans and the hot-honey cauliflower bites that are breaded, lightly fried and served with a signature barbecue ranch and smoking-hot honey infusion. There’s a long list of sandwiches and burgers, not to mention specialty entrées like jambalaya, gumbo, catfish and shrimp and a grilled salmon, but one would be remiss in skipping over the main attraction at Lucille’s—the barbecue.
The founders of Lucille’s present a taste tour of the best barbecue, from the Carolinas and Kansas to Texas and Tennessee. All the meat is hand-rubbed with special spices, marinated for more than 12 hours and then cooked in a smoker filled with hickory wood (some cuts for up to 24 hours). The result is fall-off-the-bone meaty goodness, smoke-ringed with crusted edges.
A Lucille’s favorite is the baby back ribs, tender pork ribs that are slow cooked with sweet hickory smoke then grilled and basted with a special barbecue sauce. More meat, please? Texas-style beef brisket, tri-tip and St. Louis spare ribs help round out the meaty options. You might not want to miss what Lucille’s can do with fowl, too. The Southern fried chicken comes with breasts dipped in buttermilk, breaded and deep fried and topped with grandpa’s pan gravy. Or try the Nashville hot chicken—that same fried chicken but tossed in a fiery Nashville hot sauce and served with sweet pickles and Alabama white BBQ sauce to help with the heat.
