Imagine the best Mexican meal you’ve ever had. Nice memory, right? That perfect enchilada? Amazing salsa? Unforgettable margaritas? Well, get ready to replace those memories with new ones, courtesy of Javier’s, a next-level Mexican dining experience in a stunning space at Aria.
The decor at Javier’s sets the mood right away—dark tones, opulent wall art, wide, leather-lined booths and a “tequila tree” instantly make you want to take your seat and take advantage of everything Javier’s has to offer. And you absolutely need to start your meal here with one of Javier’s signature tequila-based cocktails. The eponymous cocktail here blends Patron reposado tequila and Grand Marnier, while the Aroma De Mujer mixes silver tequila and Chambord for a unique sip. For a lighter sip, try the Pepino, silver tequila blended with agave nectar, cucumbers and fresh lime juice. Pair any or all of these cocktails with appetizers like the trio de ceviche (featuring your choice of meat), empanadas de camarón, stuffed with shrimp, rajas, crema Mexicana and salsa quemada, or queso fundido, a decadent amalgam of cheese, onions, mushrooms, chorizo and chipotle.
Main courses here feature all your favorites like chili verde and carnitas, but poultry fans should check out pollo Josefina, a bone-in airline chicken breast braised in a creamy chipotle sauce with mushroom and onions. Another highlight is Cabo Azul, a Maine lobster enchilada and a poblano chile stuffed with shrimp and Dungeness crab, along with an Ensenada-style shrimp taco. Another standout is chile negro (pictured), braised Angus short ribs in chile negro sauce with micro-cilantro.
If your tastes run more along the surf and turf route, definitely check out carne y camarónes, an 8-ounce filet mignon served with two Mexican wild white prawns sauteed in a garlic butter sauce. Vegetarians have choices here as well, including enchiladas stuffed with sauteed zucchini or spinach.
Desserts run the gamut from churros to flan and ice cream, but if you’re feeling adventurous, try the pastel de guayaba, a guava cheesecake topped with whipped cream.
