Holsteins Shakes and Buns, which announced in would close its Cosmopolitan doors on July 9 after a 10-year run, will soon be succeeded by Amaya Modern Mexican.
Gen3 Hospitality, the group behind Holsteins, is bringing Amaya Modern Mexican to the space, with a targeted debut of January 2025. When What Now Vegas earlier this year uncovered Gen3 would open in a new restaurant in Holsteins’s place, the firm’s President Stacia Stephens declined to comment at the time.
“Amaya brings the soulful, spicy flavors of coastal Mexico to life with bold dishes and sustainable ingredients,” according to the restaurant’s newly-published Facebook page. “Located in The Cosmopolitan of Las Vegas, it offers a vibrant dining experience inspired by the energy and essence of Mexico’s scenic shore.”
Chef Jason McLeod, previously behind the launch of Proper Eats at Aria, is crafting Amaya’s menu ahead of its debut next year — be on the lookout for dishes like a whole lobster with chili cream sauce and tender birria short rib over corn purée.
Amaya will be part of the resort’s vibrant dining scene, featuring live DJ sets and a cocktail menu with creative offerings like a smoky mezcal Old Fashioned. While it will be owned and operated by Gen3, the restaurant is the latest concept from Clique Hospitality, also responsible for several popular spots around the city.
