This is definitely one of my favorite Italian restaurants in Las Vegas. Elegant-yet-supremely comfortable Brezza in Resorts World Las Vegas opened when the property did in 2021, and since then has had its customers on repeat.
Inside, a casual bar sweeps across the end of the kitchen, and a wood-fired oven will draw your attention as you dine. Start with a cocktail, and what better choice than a spritzer? The Spritzza combines Bisol prosecco, Italicus liqueur, grapefruit and grapefruit soda for a light sip; or choose from four types of Negronis, or a lovely selection of wine, most from Italy, although a few from California make the list. I am more of a beer person myself, and again there are solid choices here.
Appetizers here will do more than whet your appetite—you’ll be tempted to make them your meal. The heirloom tomatoes served in a caprese with buffalo mozzarella and grilled crostini with basil pesto is simply stellar, and the salumi and cheese board will have you picking throughout your meal. Seafood fans can dig into fried calamari, grilled octopus or steamed clams. From the crudo/raw bar choose, Taylor Bay scallops, a seafood tower or
Tonno carpaccio.
As you would expect, pasta is a big draw here—you’ll find a variety of types, like herb pappardelle served with a lamb ragu, gnocchi with fennel sausage and bucatini amatriciana. My faves are the cappellacci oreganata, fragrant pockets of pasta with cauliflower and spinach inside, and the corn agnolotti. Corn agnolotti has been see on several menus on the Strip recently, and they are all slightly different.
Brezza’s executive chef, Nicole Brisson, has a long history on the Strip, is an expert on beef, and that’s reflected here. You’ll find house dry-aged steaks from 100 to 170 days, from 16 to 42 ounces. And from the grill, filet mignon, New York strip and a pork T-bone will satisfy. Add on shrimp, scallops or a half-pound lobster, if you wish. Plus, other choices include a whole branzino from the grill, veal marsala and osso buco. You can’t go wrong with any of those.
Sides are equally as delicious, and mascarpone mashed potatoes are a decadent option. With pickled peppers and a poached egg atop, the dish itself will draw attention away from any other occupants on the tabletop.
