One of the most revered names in modern Chinese dining, Mr Chow opened in Las Vegas in late 2015. The opening not only brought stars flocking to Caesars Palace to experience the bigger-in-Vegas restaurant, which features a magnificent chandelier that produces a lighting show each night, and the Beijing-inspired menu that the restaurants are known for (there are six other locations). It’s a menu that’s designed to elicit a feel of traditional Chinese cuisine.
Said founder Michael Chow (and a food star in his own right) in an exclusive interview with Las Vegas Magazine’s Kiko Miyasato shortly after the restaurant opened, “First of all, the intention of Mr. Chow is really not to do with business. (It’s) more to do with my personal, internal desire and need to fulfill or to recapture my country, my parents. To me, China has always been the greatest country in the world. So my journey of life is expressed through the cuisine of China. To show respect, how great Chinese cuisine, Chinese culture, Chinese people are.”
Some of the dishes you will want to experience on your journey include Mr Chow noodles, a delight touted on the menu as “The classic handmade Beijing noodles Mr Chow introduced to the West in 1968”; the Gamblers Duck, which is delivered with plum sauce and steamed pancakes; and whole fish. In Las Vegas, specialties of the house include squid ink rice noodles, dressed Dungeness crab; and ma mignon, with a recipe that dates back to 1975. With the semi prix fixe menu, you can experience two courses for a set price, including Beijing duck, which is separately roasted for each order in a Beijing Duck oven. You can almost taste the skin now, right?
Other popular dishes include the green prawns (a dishthat inspired pop artist Keith Haring’s 1986 painting, Mr. Chow as Green Prawn in a Bowl of Noodle, a dynamic, fun piece that captures the zeitgeist of the restaurant) and Beijing chicken with walnuts.
