Since 1968, restaurateur Michael Chow has shared his food and philosophy through his namesake restaurants, Mr Chow, with locations in New York, Miami, London and Beverly Hills, and his Las Vegas location at Caesars Palace.
The concentration on authentic Beijing cuisine, combined with impeccable service and interior design that exudes museum-like quality, has made the Mr Chow brand a wildly popular dining experience for A-list celebrities and common folk alike.
“So the environment (of the restaurant) is one entertainment out of the next,” Chow told Las Vegas Magazine when the local outpost opened in 2016. “Entertainment in terms of the restaurant’s traditions, there’s six things. One is the dessert trolley; one of the most beautiful things you’ve ever seen. The other is the champagne trolley; we have Dom Perignon by the glass. The other is the noodle show. The other is the carving of the Beijing duck. The other is the deboning of the Dover sole, and then the wine decanter.”
Other specialty dishes of the house include the green prawns, chicken satay, turnip puff with ham, squid ink rice noodles, dressed Dungeness crab served off the shell and folded into a cloud of egg whites, and the ma mignon, an original recipe from 1975 that slices tender filet mignon and is served with a special sauce. The imitation shark’s fin soup, sweet and sour pork, lobster shumai and the crispy gambler’s duck, served with steamed pancakes and plum sauce, are all equally special as well.
“This restaurant, like all the Mr Chows, has a special side to it, too,” Chow said. “This environment is white on white, a Mr Chow tradition. Very romantic. This is fantasy, this is poetry, this is theater, excitement. I was given a 60-foot dome, with 35-foot ceiling, so I created this kinetic sculpture.” It’s named The Moon, a 26-foot moveable disc that changes colors and light; throughout the evening it entertains. “It will perform, like the Bellagio Fountains,” he said.
